Happy Valentine's Day! I poked around a bit 'in the good old blog that I follow and I saw some wonderful cakes and wonderful dishes just to celebrate this Valentine's Day! I will prepare soon a Dolcino for my love .... I hope they like it! Meanwhile, I leave you this recipe ...

classic among classics, octopus with potatoes ... and my house everyone is happy! In summer the best, nice fresh salad, but even in winter is not bad, maybe with some warm toast .... what do you think?!

INGREDIENTS:
an octopus of about 1 kg (or 2 small) - 3 / 4 large potatoes - extra virgin olive oil - lemon - salt - parsley



PREPARATION:
If the octopus is not already clean, you have to do it yourself, you have to empty the bag, remove the teeth and eyes. I asked the fishmonger :-)
Put the octopus in a large saucepan, add two "rounds" of extra virgin olive oil and lemon juice. I do not put water, the octopus slowly let a little 'liquid that will not do enough to stick to the pan, if you prefer you can still add a glass of water. Simmer for about 40/45 minutes. In the meantime, wash the potatoes and spazzolatele, then boil them with the skin for about twenty minutes, or until you can not pierce thoroughly with a fork. Then drain them, let them cool a little, peel and cut into chunks.
When the octopus is cooked, pull away from pan and cut into small pieces, add it to potatoes, mix together and season the sauce with the cooking of octopus and a sprinkling of parsley. If you need to add salt, I usually do not because I put the sauce is very tasty.
